Just Tuesday

It's only 1pm and I've actually got a lot of cleaning done! Not just tidying, like... The kind of cleaning you only do when you're putting off something else you don't want to do. In my case it's addressing Christmas cards.


6 loads of laundry washed and actually put away later, the baby is finally ready for a nap. And unto us a new seasonal American spinoff of the Great British Baking show. Oh- its Christmas! Can I be Mary Berry when I grow up?

Is it too early for a glass of wine?
How does one stay on top of laundry so they don't have to do 6 at a time?

spaghetti squash deliciousness

I have not been maximizing my spaghetti squash to the fullest potential.
We have all learned to cut our spaghetti squash in half BUT it turns out the strands do not run vertically; they run in a circle! If you cut your spaghetti squash in slices you will get longer strands and  maybe an even easier cooking time!
I have been obsessed with this recipe, especially since learning the secrets of the squash.

Enjoy!


Poke several holes into the spaghetti squash with a knife. Place on a microwave safe dish and microwave for 10 minutes. Remove from microwave with oven mitt. (It will be HOT!)


Slice spaghetti squash into even rings. Return to plate and microwave for another 5 minutes, or until tender. In the meantime, prepare the shrimp. An easy method is to boil shrimp for just a few minutes or until they are pinkish.



Heat the oil in a large pan (like a wok) over medium heat. Once heated, add onion and garlic and saute for about 5 minutes, or until garlic is fragrant


Once spaghetti squash is cool, peel the strands away from rind with a fork. Add to pan. Add salt and pepper to taste.


Add sundried tomatoes and kale and cook until kale is wilted. Finish with basil - this is what I use, toss in shrimp.


Serve warm and enjoy!

One medium spaghetti squash
1 tbsp. olive oil
1/2 yellow or white onion, chopped
1 tsp. garlic, minced
1/2 c. sundried tomatoes, chopped
2 handfuls of kale (or spinach)
1/2 lb. shrimp (i like raw, de-veined shrimp)
Salt and pepper to taste

6) Finish with a tablespoon of chopped fresh basil OR if you are a cheater like me, this basil paste that taste awesome and doesn't go bad.

7) Serve warm and enjoy!!
